Christmas has gone, and having the same meals as leftovers gets old quickly The good news, however, is that it doesn’t take much to spruce things up a bit. Whether your Christmas was decked out with the usual glazed ham or you served up roast beef, chicken or turkey on the day, National Baking Company has partnered with Chef Damion Stewart to share three ways to repurpose those Christmas trimmings.

For something easy to make and even easier to elevate, a sandwich is definitely the way to go, and it doesn’t have to be boring, either. Amazing sandwiches need only a hearty vessel, like Giant Hardo Bread, and a few additions. Instead of regular mayo, spice things up with mustard, salt and honey, or top off the leftover beef or ham with chunks of avocado or roasted peppers— it’s an easy way to add layers of flavour and different textures.

And perhaps the most underrated ways to use up the holiday leftovers are salads and, as some call it, ‘dump and bake’. Make a leftover ham salad and add chickpeas or your favourite nuts for a bit of crunch; or a ham frittata, served best sandwiched between slices of soft white bread.

Here are two recipes to beat the ‘boring leftovers’ rut :

Ham Salad

INGREDIENTS

6oz chopped lettuce

¼ cup cubed tomatoes

¼ cup sliced cucumbers

¼ cup julienned red onion

6oz diced ham

2 tbsps feta cheese (optional)

2oz salad dressing of your choice

3 packs of National Spicy Chickpeas (for crunch)

DIRECTIONS

1. In a bowl, combine all ingredients except the ham

2. Place the ham on top

3. Sprinkle chickpeas over the salad.

Serves 2

Ham Frittata (dump & bake) on rolls

INGREDIENTS

8 eggs

¼ cup whole milk

10oz leftover ham

½ cup mozzarella cheese

1 diced onion

2 diced tomatoes

2 springs of scallion

3 tbsps diced bell peppers

¼ tsp salt

¼ tsp black pepper

DIRECTIONS

1. Preheat oven to 385°F.

2. Add a large non-stick pot to preheat the oven for three minutes.

3. In a bowl, whisk eggs and whole milk.

4. Add remaining ingredients and whisk until everything is evenly combined.

5. Bake for 45 minutes or until the middle is set.

6. Serve with National Premium Rolls or National Sliced Bread (toasted).
