Liang Hui Zeng is from a family of chefs. Well, almost. The youngest of three boys, his older brothers are also sushi chefs working in Canada and the United States, so it's not strange that he 'followed' in their footsteps. But he thought it was the most interesting job and he loves the Japanese culture, so he fulfilled his desire and specialises in something that's synonymous with Japanese: sushi.
He fine-tuned his skills studying in America for four and a half years and is loving his first stint in Jamaica at Springroll Asian Fusion at 73, Knutsford Boulevard. Personally, he loves spicy food and has already fallen in love with Jamaican pan and curried chicken. But his favourite food is the sweet flavours of Fujian in the South-Eastern China province because that's where he's from.
Zeng is very good at what he does and can probably do it with his eyes closed. He mans the sushi bar with the precision and dexterity of a well-oiled assembly line. Raw or cooked, there is a sushi for everyone for The Gleaner-sponsored Restaurant Week whether it's California rolls or Tempura.
