Leanne’s Sweet Tooth is an eight-year-old virtual baking house owned by young chef Leanne Morrison, who has dedicated her time to produce options that you wouldn’t see in a typical bakery.
The current pandemic has scaled down operations for Leanne’s Sweet Tooth, which normally provides custom cakes for all occasions, dessert shots, different tartlets, French macarons, and more. So, it’s now focusing on creating fun and delicious individualised desserts available for pickup or delivery.
“In this time of great uncertainty, I try to create ‘pick me uppers’ in the form of desserts for my clients, and hope to bring a smile to their faces,” she told Food.
The baker asserts that her training and experiences give her establishment a competitive edge, placing it at the fore. Starting with an internship in France, then an adventurous backpack escapade across several European cities, she expanded on her love for food and desserts. Morrison, who loves being in the kitchen also, went on to pursue a diplôme de pâtisserie at Le Cordon Bleu in Ottawa while working at Stubbe Chocolates, a chocolate bakery that has been in existence since the 1960s. Her goal was to return to Jamaica and start a company that would offer tasty and unique options that encompassed all the things she enjoyed from her travels.
“Here at Leanne’s Sweet Tooth, we are all about the quality of our products. We pride ourselves on providing products that you don’t normally find in your average bakery in Jamaica. We like to go the extra mile in everything that we do. We strive to provide products that have a keen attention to detail and give you that ‘this looks too good to eat’ type of feeling, but when you take your first bite, you can’t stop because not only does it look incredible but it also tastes delicious,” she shared.
Leanne’s Sweet Tooth is best known for its signature French macaron cake. It can only be found at Leanne’s Sweet Tooth in Jamaica, and according to Morrison, who is very proud of this creation, by extension across the world.
The cake consists of two layers of extra-large French macarons sandwiching a layer of your choice of cake and fillings and topped with regular French macarons and other goodies. The cake is also customisable.
Still, the chef says every option is delicious and you must try her lychee cake, tiramisu cake and lemon meringue macarons or tarts. Plus her favourite cake, her mom’s chocolate ganache cake that she may or may not have taken as her own (thanks, Mom) is to die for.
Morrison has been in the kitchen for almost her life, making cakes, candies or simply experimenting with her mother. She does not intend to put up her hat any time soon.
“Being in the kitchen allows me to be my most creative self. I love making things with my hands. It’s like being a scientist and experimenting with all the exact measures, times and temperatures. I am able to make something decadent and delicious from nothing,” she said.
