Defeating the Heat with Fun Mocktails

Camps are out, summer school is over, but the heat is still here rearing its ugly head. Since the little-loves are home full time for the remainder of the season, now is perfect to cool it down with cocktails. How about we cut out the alcohol, making these mocktails flavourful and refreshing for everyone.

Here are a few recipes from chef Noel Cunningham that will help you to enjoy some clean, flavourful family fun:

Summer Breeze

Ingredients

Splash of grenadine

1 part pineapple juice

1 part orange juice

1/2-part lime juice

Optional: orange slice and maraschino cherry for garnish

Directions

In a glass, over ice, combine all ingredients

Sparkling Ginger Lemonade

This is a perfect drink for a nice summer evening after a hot day. You won't miss alcohol.

Ingredients

2 oz bubbly sparkling water

1/2 ginger simple syrup

3 oz strong lemonade

Ginger simple syrup

Ingredients

1/2 cup granulated sugar

1/2 cup water

2 tbsp grated ginger

Directions

For the simple syrup: In a small saucepan, bring equal parts water, sugar and ginger to a boil, then reduce flame and allow to simmer until thickened. Remove from flame and leave to steep for minutes, then strain and discard ginger.

Fill a Collins glass with ice and add ginger simple syrup, lemonade and top with sparkling water. Garnish with a lemon twist and enjoy.

Old-fashioned PiÒa Colada

Ingredients

20z frozen unsweetened pineapple chunks

1/4 cup ice

1/2 cup pineapple juice

1/4 cup unsweetened coconut milk

1/2 simple syrup

Fresh pineapple wedges

Maraschino cherry (optional)

Directions

Place the frozen pineapple chunks and ice in the bottom of a blender.

Pour the pineapple juice and coconut milk on top. Add simple syrup. Puree until smooth. Taste to test desired sweetness. Pour into glasses and garnish with fresh pineapple wedges or a maraschino cherry. For an extra special touch, chill the glass by filling with crushed ice or ice water before pouring piÒa coladas in. Serve immediately with a colourful toothpick umbrella.

Blue Raspberry Martini

A twist on the classic martini with vivid colour and irresistibly sweet and tart blue raspberry flavour.

Ingredients

3 oz Mott's Mr & Mrs T blue raspberry martini

Splash lime juice

Ice

Directions

Fill a shaker with ice. Add all ingredients, then shake and strain into a chilled martini glass and garnish with a raspberry.

Jackfruit Daiquiri

You won't miss alcohol with this rich and creamy jackfruit daiquiri. Jackfruit is considered the miracle fruit, and this mocktail is definitely a miracle.

Ingredients

1 cup crushed ice

1/4 Jackfruit puree

1/2 cup coconut milk

Cinnamon simple syrup

Cinnamon simple syrup

1/2 cup granulated sugar

1/2 cup water

1tbsp cinnamon powder

Directions

For the simple syrup: In a small saucepan, bring equal parts water, sugar and cinnamon to a boil. Whisk together to combine, then reduce flame and allow to simmer until thickened. Remove from flame and leave to cool.

Combine all ingredients in a blender and blend until mixture is smooth and creamy. Pour into glass, and dust the top with extra cinnamon, then serve.
