2 tablespoons fresh lemon juice
1 tablespoon Grace Vinegar
1tablespoon olive oil
1 teaspoon grated lemon peel
1/4 teaspoon basil, crumbled
1/4 teaspoon salt
1/4 teaspoon Grace Caribbean Traditions Black Pepper
2 cups halved cherry tomatoes
1/3 cup sliced red onions
1/3 cup chopped fresh parsley
1 can Grace Butter Beans
1 can Grace Tuna, drained
1/2 cucumber, diced
1/4 cup Parmesan cheese, shredded optional
DIRECTIONS
1. To prepare dressing, whisk together first 7 ingredients (lemon juice through pepper) until blended.
2. Combine tomatoes, onion, parsley, beans and tuna in a bowl. Toss to combine and top with cheese (optional). Serve and enjoy
