Put a little 'pep' in your chicken with Peppatree

Take your chicken up a few notches with this delicous Peppatree Pineapple cilantro jerk chicken.

Good ol' Jamaican jerked chicken is good any time of the day or year, and Christmas is no exception. But make it a little special and bring it up a notch with a special sauce from our friends at Peppatree.

 

Ingredients

 

4-6 tbs Peppatree Ol' Time Jerk

2 tbs fresh cilantro

 

Ingredients for Peppatree Blissful Baste:

 

2 tbs freshly squeezed lemon juice

1/4 cup soy sauce

1/4 cup pineapple juice

1 cup Peppatree Smokey BBQ Sauce

1/4 cup Peppatree Red Peppa Sauce

 

Directions for preparing the baste:

 

In a large bowl, whisk together lemon juice, soy sauce, pineapple juice, Peppatree Smokey BBQ Sauce, Peppatree Red Peppa Sauce.

Transfer to a saucepan, bring mixture to a boil, then reduce heat and simmer for about 3 minutes.

 

Directions for preparing the chicken:

 

Butterfly the chicken by cutting along the breast bone, then wash chicken with lime, lemon, or vinegar. Score the meat all over with a small knife. Combine the cilantro with the Peppatree Ol' Time Jerk and massage the chicken all over ensuring to get seasoning right down into the scores made.

Marinate for 3 hrs minimum (ideally overnight if you can).

Bake chicken at 350 degrees, brushing generously all over with the Peppatree Blissful Baste while cooking, finish chicken with the oven turned up to either 450 degrees or broil to achieve a nice char.

Remove and allow to rest for 10 minutes, serve warm.

 

Directions for grilled pineapple:

 

Cut both the top and bottom off the pineapple, cut lengthwise into 1-inch thick wedges and place on hot BBQ grill or cast iron grill pan until a nice char is achieved.

Tip: For a spicier experience, increase the amount of Peppatree Red Peppa Sauce to achieve your desired heat level.
