Delectable dishes at Schools’ Challenge Quiz finals

The 54th staging of Television Jamaica’s Schools’ Challenge Quiz was supported through sponsorship by the Delect Foods brand, a subsidiary of the Derrimon Trading Company Limited. For the finals, the teams and supporters enjoyed delectable dishes such as the Delect Corny mac and cheese, a fusion of your traditional macaroni and cheese with a Jamaican favourite, corned beef.

As a proud sponsor of Schools’ Challenge Quiz, the Delect team served patrons on the terrace grounds of TVJ as they eagerly watched the teams from Calabar and St Jago High School go head to head, where St Jago was ultimately crowned champion of the season.

Corny Mac and Cheese (6 Servings)

2 Cups Delect Elbow Macaroni

3 Tablespoon Margarine

3 Table Delect Flour

2 Cups Milk

½ Teaspoon Delect Salt

½ Teaspoon Black Pepper

¼ Teaspoon Nutmeg

½ Teaspoon Basil

½ Teaspoon Parsley

1 Can Corn

¼ Cup Parmesan Cheese

1 ¾ Shredded Cheddar Cheese

1 Can Delect Corned Beef

1 Thyme

2 Cloves Garlic – minced

1 Medium Onion

½ Cup Delect Ketchup

¼ Cup Delect Fish and Meat Sauce

¼ Teaspoon Black Pepper

1 Small Sweet Pepper

1 Teaspoon Oil

Cook pasta until tender, not soft, then cool.

Sauce for pasta:

Melt butter in a pot.

Sauté half the amount of onion and garlic, nutmeg and dried herbs until mixture is lightly browned 1-2 minutes.

Add flour and whisk continuously, adding milk in a steady stream while whisking vigorously until thickens.

Add salt and pepper and parmesan cheese and remove from heat.

Corned Beef:

Cook up onion, sweet pepper and garlic clove in a teaspoon of oil.

Add mashed Delect Corned Beef and stir.

Add Delect tomato ketchup and Delect Fish & Meat Sauce.

Add a layer of Delect Elbow Macaroni mixture to the bottom of the casserole dish.

Pour in evenly Delect Corned Beef mixture.

Then corn sprinkle cheese on top.

Cover with a layer of Delect Elbow Macaroni mixture topped with cheese and bake until

golden brown at 360*F.
