Steadily gaining popularity since its opened in September 2008, Lyming, located in Walkerswood, St Ann, according to its Assistant Manager Sonae Scott is best known for its authentic Jamaican jerk dishes.

"We create our own seasoning for our pork, chicken and sausage. We have our secret ingredients, and it also helps that we jerk on sweet wood."

Situated in a convenient spot along the main road in Walkerswood, Lyming is a favourite for many 'out of towners' and those who are simply en route to a specific destination. "People from all over, and even overseas, who are on vacation come here, sometimes not even for the food alone but at times for drinks."

And for those who have children but still want to enjoy some time away from home, Scott says there is a play area for them. She notes that the area designated for them is fully equipped to occupy their time.

Opened daily, the establishment whips up tantalising treats for customers. And it is not only about the jerk, as curried ram goat is also a menu option. And through these offerings, local farmers have been benefiting. "We source our ram goats from local farmers who we support in and around the area," says the assistant restaurant manager.

To complete the local cuisine dishes, customers get to choose from various side dishes. "We offer festivals, roast breadfruit, roast sweet potato, roast and boiled corn to go along with the rest of the meal."

Buffet style

Always trying to be innovative and creative in an attempt to retain and recruit new customers, the restaurant has added breakfast and brunch to their offerings. "On Saturday and Sunday we offer breakfast. We start serving from eight in the morning until 11 a.m. And brunch is offered every last Sunday of the month from 9:30 a.m. to two in the afternoon. After those times, the regular menu is served."

Scott also notes that brunch which cost $700, is buffet style and includes an entertainment package. "It is really a good day for family and friends to come out because we have music and games to entertain. And then we have real Jamaican food like ackee and salt fish, mackerel rundown, corn pork, steamed callaloo served with orange juice and chocolate tea. And our signature bread or sweet potato pudding is served at every brunch. So it is quite a treat for our customers," says Scott.

For breakfast she notes that the chocolate tea which is grated and boiled is also a big hit among diners.

In stating why Lyming at Walkerswood continues to attract visitors, Scott was quick to give these reasons. "The flavour, food, service and the ambience we offer. And through our motto which states, 'Come for the flavour, stay for the lyme' we are able to appeal to many."
