Mouth-watering! - Rib, Roast and Rum returns with a bang

Racks of succulent ribs roasted to perfection, a variety of side dishes and unlimited rum mixes. This sounds like heaven and when Rib, Roast and Rum returned to the city last Friday night, food lovers might have thought they died and went to paradise.

Patrons who gathered on the lawns of The Palms, Police Officers' Club in St Andrew, were greeted by tempting aromas wafting in the cool night air. Their culinary journey began at the soup station, where they were able to savour either crayfish or meatless pepperpot soup.

From there, the path led to yummy appetisers: pulled pork pizza, plain pizza and sesame chicken skewers.

Seafood lovers could enjoy foil-wrapped roasted fish with festival or coconut bammy sticks. Those craving Jamaican jerk had the opportunity to devour rum barbecue jerked chicken.

At the roasting station, crowd-pleasing rum barbecue and guava barbecue ribs beckoned. Fire-roasted yam, pesto-rubbed sweet potato salad, sweet corn on the cob, smoked three-cheese mac and cheese, and smoked cabbage slaw did an excellent job complementing the ribs.

Chef Christian Sweeney and his dedicated team from Fuzion Food Service really outdid themselves in providing diversity and just the right amount of spice in their offerings.

On the sweeter side, Confections of a Sugar Junkie treated visitors to a sugar rush with apple pie cheesecake, coconut macaroons, bread pudding, strawberry shortcake and vanilla cupcakes drizzled in chocolate. Lian Chen of Lilee's Cakes & Catering charmed her way into the hearts of many with her heavenly lemon cheesecake mousse cups and s'mores truffles.

Adding to the atmosphere were domino tables from which shouts of jubilation could be heard. There was also a section for video games, which had some stepping into a virtual reality of driving or fighting. Others were seen chatting with friends or getting busy dancing the night away under the moonlight. All in all, Rib, Roast and Rum, was one to remember.
