Make Veggies Fun with Voodles

When most persons think of eating healthy and incorporating their fruits and vegetables, they think of dreadfully boring salads, weird-tasting green juice, and extra-light meals which leave them feeling hungry as soon as they are done.

Well, thanks to Voodles Jamaica, eating healthy does not have to be a mundane task. They are shaking things up with a few twists, some turns and a lot of curves.

Voodles Jamaica is a veggie noodle company which provides conveniently packaged vegetable noodles that allows persons to have a fun way of incorporating vegetables into their diet. "A lot of people are doing spiral vegetables; however, they do not like the clean-up that comes with making them. Some of the equipment used are tedious to clean, so Voodles provides a quick and easy alternative without the mess," explains CEO of Voodles Jamaica Danielle Britton.

Voodles is an addition to Nature My Therapy a vegan food company run by Danielle and Marc Britton specialising in vegan juice blends.

Started in November 2017, Voodles are currently available in zucchini, carrot cucumber and beets. However, be on the lookout for more options shortly. Thai-Fusion Carrot Voodles

Serves 2-3 people

 

Ingredients:

 

1 pack of carrot Voodles

2 cups spinach, chopped

1 small red bell pepper, sliced

1 tsp Thai curry paste* mixed with 1 teaspoon peanut butter

3 garlic cloves, chopped

1 cup ackee (already cooked)

Bunch cilantro, chopped

Sesame seeds (optional)

1/3 Scotch bonnet (optional)

Peanuts, chopped

Coconut oil

Water

Salt

 

Method:

 

1) Drizzle coconut oil in a large pan, add the Scotch bonnet and red bell peppers. Cook until soft.

2) Then add the carrot Voodles, Thai curry/peanut butter combination, garlic and mix everything well until all the noodles are coated! Add a bit of water to help the paste blend throughout.

3) Cover pan and cook on medium heat for 4 minutes.

4) Remove lid and add spinach, sesame seeds, peanuts, ackee, cilantro and mix everything together gently. Cook on high heat for 3 minutes. Season with salt to taste.

Be sure to read the labels of Thai curry pastes- some contain shrimp. If you are vegan, avoid pastes with shrimp or make your own.

 

Zucchini voodles vegan omelette

Serves 2-3 people

 

Ingredients

 

1 pack of zucchini Voodles

1/2 cup coconut milk

1 cup garbanzo flour*

3 plummy tomatoes, diced

Thyme

Pinch of nutmeg

1 small onion, finely chopped

Scotch bonnet (optional)

1 tsp baking power

Coconut oil

Salt

 

Method:

 

 

1) In a large bowl, add the coconut milk, garbanzo flour, thyme, nutmeg, baking powder and salt and mix well. Add some Scotch bonnet if you'd like some extra heat.

 

 

2) Then add diced tomatoes and zucchini Voodles, and allow the mixture to sit for 10 minutes.

 

3) In a separate pan, cook the onions in some oil until golden and set aside

 

 

4) Now you're ready to make the omelette! It's easier to make these in smaller sized omelettes if it's your first time making a vegan one!

 

 

5) Drizzle a pan with oil, and allow the oil to heat for just a bit.

 

 

6) Then pour a portion of the omelette mixture into the pan and cook as you would eggs to your preference!

 

 

7) Remove from pan and enjoy!

 

NB: Garbanzo flour is also known as chickpea flour or gram flour. It can be found near the health food products at most supermarkets or at Indian food shops.
