The Zaca gives influencers a taste of Italy
Located on the pier at the Errol Flynn Marina is one of the newest gastronomic gems to grace the island’s shores. The Zaca Restaurant and Bar officially opened its doors on Saturday, giving specially invited guests a taste of Italy.
With an engaging and exciting cocktail hour that got its start in Kingston, social media influencers and content creators boarded the bus provided and made their way to Portland for an enchanting and enticing evening.
The guests were greeted by a smooth Johnnie Walker-inspired mix, which got everyone in the mood for a mouthful of flavour. And, the breathtaking view overlooking Errol Flynn’s Marina perfectly complemented the event’s savoury indulgences.
The live culinary demonstration included the spaghetti alle vongole, which consisted mainly of shellfish ranging from shrimp and scallops to mussels and clams. Those with allergies were fortunate enough to try their creamy chicken pasta, which was incredible from start to finish.
The reggae prawn presented a refreshing take on flavour. Sitting on a slice of cucumber was a beautiful combination of cooked prawns with jerk mayonnaise and topped with cream cheese.
From there, the audience paid close attention to the salmon au gratin. The pan-seared salmon was served with a cheesy au gratin. These thinly sliced potatoes had a similar look to a casserole.
The final dish of the evening was an Italian twist on pork chops. After being dipped in a batter, the pork is then fried until golden brown and served with a signature gravy on top with mashed potatoes and vegetables on the side.
With a rich culture rooted in the parish, The Zaca stayed true to its home, enlisting Brandford Leslie as the restaurant’s executive chef. Born and raised in Portland, the good chef was responsible for the festive live cooking demonstrations, and he put on an excellent show.
A fan of flavour all of his life, Chef Leslie’s culinary journey began at a young age, watching his grandmother cooking in the kitchen. “I grew up around food and fell in love with it,” he told Food.
By the time he got older, he had high hopes of emulating family members who had gone into the business of catering. He has delivered on this promise to himself, receiving certification from The HEART/NSTA Trust Buff Bay Vocational Training Centre and dedicating 10 years to being a chef.
Specialising in local dishes, Chef Leslie was more than happy to be bringing authentic island flavour to some of Italy’s most beloved dishes.
“The feedback has been great so far. I’m glad that everyone has been loving the dishes, because that’s what people can expect when they come to The Zaca: good food, good vibes and love. From the moment you enter the premises, you’re going to feel relaxed. And, once you taste the food, you’re going to feel the love,” he said.
