Who would have thought that breadfruit could make a tasty fruit cake, moreover win a Christmas cake contest? But Fabian Grant showed that you can use the popular Jamaican staple to make a scrumptious fruit cake and without the use of flour.
For the J. Wray and Nephew Red Label Wine Christmas Cake contest this
year, contestants were asked to get creative by adding Jamaican-grown
ingredients to their cake recipes. As usual, many heeded the call, but
in the end, only 10 finalists were chosen for the bake-off. Among the
lot was last year's winner, Kevin Stewart who was chosen to defend his
title.
The contestants were very creative and came with some very
interesting recipes. There were cakes with beetroot, plantain, tamarind,
June plum, otaheite apple and of course, breadfruit. There was also a
sugarless cake. The contestants thought of everything, from a cake that
the vegetarian would love to something for the diabetic.
The
finalists were judged on the presentation, texture and taste and the
"want more factor". Some fell short in areas but made up for it in
others. Some had judges taking more than just one bite. But in the end
there could only be one winner. Fabian Grant took first prize for her
Breadfruit Blend Christmas Cake. Defending champion Stewart did put up a
challenge with his Affi Come Back Plantain Christmas cake but ended up
second-place. Newcomer Susan Miller took third place with her Plantain
and Beetroot Fruitcake.
