... The Ruins at the Falls?

This is the first time that The Ruins at the Falls will be participating in The Gleaner-sponsored Restaurant Week. With a beautiful natural ambience, its head chef Sam Shum expects people to come out and enjoy the restaurant and a fine dining experience. "Hopefully, we get more business and people will have a great time."

With a wealth of experience, the fast-paced Shum started his career in Hong Kong right after high school. "I started working at The Hilton as a kitchen helper and after about five years I immigrated to Canada." This was after making good use of The Hilton's internal training where he then climbed the ladder to become a senior cook.

Leaving Hong Kong as a senior cook, he then took up a job offer at the Ritz-Carlton in Montreal, Canada. Subsequent to that, he opened his own food establishments in Toronto, Canada and Georgia in the United States.

Then it was off to Jamaica for Shum. Other than working at the Ruins in Ocho Rios, he has had work stint in Mandeville and Kingston, and has been medalled in many culinary competitions which he uses as a platform to promote the restaurant.
