Chef Randie Anderson's Grilled Marinated Grouper

Ingredients

1/3 cup lime juice

1tsp lime zest

2tsp horseradish

1 clove garlic, halved

1/2 tsp dried oregano

1/2 tsp dried basil

1/2 tsp salt

1/4 tsp. pepper

1/3 cup olive oil

8oz grouper fillet from Rainforest Seafoods

Vegetable cooking spray or vegetable oil

Method

1. Combine first eight ingredients in container of an electric blender or food processor. Process for 20 seconds with motor running.

2. Gradually add olive oil in a slow, steady stream. Set aside.

3. Arrange fish in 13 x 9 x 2-inch baking dish. Pour marinade over fish, turning to coat both sides.

4. Cover and refrigerate eight hours.

5. Arrange fish on a wire (mesh) rack coated with cooking spray or vegetable oil. Grill covered, over medium heat for seven to eight minutes on each side, or until fish flakes with fork, basting frequently with marinade.

Serve with steamed rice or baked potato.

One serving.
